A cookie can be any of various hand-held, flour-based sweet cakes—either crispy or soft.

Dating back to seventh-century Persia in origin, by the fourteenth-century cookies were prevalent throughout Europe where they were enjoyed by everyone from labourers to royalty. During long journeys cookies were natural travel companions enabling travellers to carry both a familiar snack bringing comfort to themselves, and as a gifts in return for the kindness of hosts during passage.

The word "cookie" comes from the Dutch koekje, meaning 'little cake.” In England, cookies are called biscuits, in Spain galletas, Germans call them keks, and in Italy they are biscotti. At cookietherapy we think of them as little hugs.
